Grantown butcher make the cut with Team GB at world butcher's challenge





The world's best butchers have been battling it out in Sacramento USA and among them was Barry Green of Cairngorm Butchers.

Barry was seen with his colleagues in Team GB putting together a sensational display marking the Queen's platinum jubilee, which drew admiring comments from MC Jess Pryles in live pictures which went around the globe on Saturday.

The event brought together teams of six which had three and a half hours to break down a side of beef, a side of pork, an entire lamb and five chickens.

They sliced and ground the different cuts to create large displays of raw protein dishes plated and displayed for customers, as they would have appeared in a butcher shop.

The butchers used a series of knives and saws to cut the meat, along with machines, including grinders and slicers, to further process it.

Judges evaluated the final display and select a winner.

Early this morning the final results were announced, with Team GB narrowly missing out on a podium place.

Germany were overall champions with Australia runners-up and New Zealand taking the bronze.

The challenge started in 2011 as a butchery competition between New Zealand and Australia. It gradually expanded to become an international event drawing teams from North America, South America and Europe.

Great Britain’s array of dishes celebrated Queen Elizabeth II’s Platinum Jubilee, complete with a meat cake and sausages arranged in the shape of a “70” to celebrate her seven-decade reign.
